Inspector notes: Observed 3-comp sink being actively used for dishwashing with a sanitizer concentration of 25PPM chlorine at time of inspection. Also observed soiled knives with dried strawberry residue on the food-contact surfaces stored on a magnetic strip in the food prep area. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Also discussed cleaning frequency of food-contact surfaces with PIC. PIC remade sanitizer basin at time of inspection. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection
