The manager went to grab paper towels and supplied them by the sink, at time of inspection. The sink is small, and the paper towels often fall when placed at the edge of the basin, causing them to be stored far away from the sink. Discussed the possibility of attaching a paper towel dispenser to the wall near the handwashing sink so there would be a designated spot for paper towels. Inspector notes: Observed meat juices pooling in a black tray with other closed packages of meat sitting on top. Alerted the manager, who brought the black tray back to the three-compartment sink to be washed, rinsed, and sanitized. All affected packaging was also wiped clean and sanitized. Discussed the importance of immediately cleaning spills as they happen. Discussed cleaning procedures to mitigate foodborne outbreak risks
