Inspector notes: Observed TCS food (Raw Chicken 52 degrees Fahrenheit) cold holding above 41 degrees Fahrenheit in the reach on cooler on the main cook line. CA: TCS foods must be cold held at 41 degrees Fahrenheit or less. COS: Per the CFSM, the chicken had been placed into the cooler less than 1 hour prior, the chicken was moved to the walk in cooler in order to be rapidly cooled.

Inspector notes: Observed multiple TCS foods (Sliced Tomato 50 degrees Fahrenheit, Slaw 46 degrees Fahrenheit, Ranch Dressing 56 degrees Fahrenheit) cold holding at greater than 41 degrees Fahrenheit in a prep top cooler on the main service line. CA: TCS foods must be cold held at 41 degrees Fahrenheit or less. COS: TCS food that had been stored in the cooler for 4 hours or greater were discarded (Sliced Tomato, Slaw). TCS foods that had been stored in the cooler for less than 2 hours were moved to the walk in cooler to be rapidly cooled (Ranch Dressing).

The facility will have the coolers serviced by a licensed technician. This will be rechecked by the Health Department.
