Inspector notes: Observed TCS food (Raw Chicken 52 degrees Fahrenheit) cold holding above 41 degrees Fahrenheit in the reach on cooler on the main cook line. CA: TCS foods must be cold held at 41 degrees Fahrenheit or less. COS: Per the CFSM, the chicken had been placed into the cooler less than 1 hour prior, the chicken was moved to the walk in cooler in order to be rapidly cooled.

TCS foods that had been stored in the cooler for less than 2 hours were moved to the walk in cooler to be rapidly cooled (Ranch Dressing).

Corrective Action: Discussed cleaning methods/ frequency of all food contact surfaces with the PIC. The PIC will have both ice machines properly cleaned and increase the cleaning frequency. This will be rechecked by the Health Department.

CA: Discussed storage order of TCS foods in warmer with CFSM. Wings had been cooked less than 2 hours prior and were properly reheated (190 F). CFSM will rearrange storage order of TCS foods stored in warmer and monitor internal food temperatures to ensure holding temperatures of 135 F or above. CFSM increased the temperature of the warmer.
