Inspector notes: Observed fried chicken sitting in fryer baskets at temperatures below 135F. When asked about the procedures for cooking and serving the chicken, the PIC informed me that the chicken sits on the fryer baskets for an hour before they are thrown away if not ordered. There was no time documentation provided for the chicken in the fryer baskets. Observed cooked white rice sitting in container without time documentation written on or near the container. PIC stated that both items were cooked or placed in their areas 30 minutes prior to my arrival for inspection. CA: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Inspector notes: Observed a deep reach in freezer with a lot of duct tape on it in attempt to hold the door closed. When opening the freezer to check the foods, the door was completely off the hinges. CA: 1. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. 2. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. A new freezer must be purchased to replace the deep freezer in disrepair.
