Observed the catch pan missing from the grill area. Grease is being drained into a bucket with a plastic liner and discarded in the trash. PIC advised that grease must be properly disposed into a grease receptacle. When cleaning the grill with water, the water can be disposed into a trash bag and dumped. PIC will add a catch pan by 2/25/25.
