Inspector notes: Observed two clear cups with food debris on food contact surface; two ice scoops with black slime that can be wiped off with an alcohol swab; tray holding clean mugs unclean with dust, food debris, and brown slime (may be coffee). CA: 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS: Employee placed ice scoops and cups in ware washing area to be washed. PIC had trays washed, sanitized and dried.

Inspector notes: Observed floors with food debris in front kitchen and back area. CA: 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. COS: During inspection, an employee dumped mopped water and squeegeed the water into the drain. The floors need to be properly mopped in corners and under equipment to fully remove food debris.
