Inspector notes: Observed pancake batter in reach in color at cold holding at a temperature above 41F. Observed sliced yellow cheese cold holding at temperature above 41F. CA: time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC removed the out of temp pancake batter and replaced it with a pancake batter that is holding the correct temperature.

Inspector notes: Observed final rinse temperature with thermaworks white max temp reading of 137F, and the temperature stickers did not turn the correct color. CA: For a stationary rack, single temperature machine, 165ºF. COS: PIC called maintenance to come fix the warewashing machine during the time of the inspection. Warewashing machine was fixed, and tested with temperature sticker; the sticker turned the correct color.
