Inspector notes: Observed that the eggs on TPHC did not have their time properly marked upon arrival; upon arrival, PIC took the eggs that were out and placed them in a reach-in unit, brought out a new rack of eggs, and then wrote 7 AM for these eggs that were brought out at ~7:50 AM. PIC states he was unsure of when those eggs were brought out, so he placed them back in the cooler. COS. Discussed that eggs placed on time shall be discarded and not placed back into coolers for future use; eggs were discarded. CA: Items using TPHC shall be properly marked with the time of discard and shall be discarded at the end of time; if the time it was removed from holding is unknown, the items shall be discarded.
