Inspector notes: Observed employee cutting ready to eat onions with bare hands. CA: Except when washing fruits and vegetables or as specified under subsection (a)4, food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. COS: Employee donned gloves but also stopped cutting onions during inspection.

Inspector notes: Observed raw pork stored above ready to eat shredded cheese in reach in cooler. Shredded cheese also stored directly next to raw beef. COS: shelves rearranged so that cheese is now stored above all raw animal products. CA: 1.
