Inspector notes: Observed sanitized dishes with a sanitizer solution that exceeded 150-400 ppm. The dishes and sanitizer observed in the three compartment sink exceeded 400 ppm. The sanitizer strips turned light blue. PIC remade the sanitizer and rewashed the dishes. Once remade, the quaternary ammonium sanitizer was observed at 400 ppm.

Inspector notes: Observed a staff member eating in the kitchen area. Also observed an opened water bottle stored above fruit in the kitchen reach in cooler. PIC corrected on site. Food employee was observed consuming food in a food preparation area, or in a food serving area, or in an area used to clean/store equipment or utensils, or in a food storage area during the inspection.

Inspector notes: Observed a condensation leak in the reach in cooler. Both coolers were leaking behind the front line. PIC advised that a work order was sent to maintenance. PIC advised to not use or store food in coolers until repaired. A follow up will be conducted on 10/11/25. PIC will not store any food in the coolers that area leaking.

Inspector notes: Observed the Quat sanitizer solution in the three compartment sink did not reach the minimum required strength of 150-400 ppm. The quat concentration was observed at 100 ppm. PIC remade the sanitizer solution. As a result, the solution was observed above 500 ppm. PIC was coached on the proper procedure to ensure that the sanitizer is properly dispensing and/or added or diluted as needed to obtain a reading between 150-400 ppm when using the appropriate test strips. Observed the dishwasher reaching 180 degrees during the final rinse according to the attached thermometer, however when using the heat testing test strips, the strips failed to turn orange per the manufacturer's instructions. PIC will notify maintenance to check the dish machine before use.
