Facility reported that work orders have been in with University for awhile with no success in getting the area finish schedule addressed. CA: walls in areas of food prep, food handling, food handling, and warewashing must be hard, nonporous, and easily cleanable to prevent debris accumulation and maintain cleanliness.

Inspector notes: Observed TCS food items in walk-in cooler temping between 44-50 degrees. All items in cooler temped, TCS items that exceeded proper cold holding temperatures were discarded. Unit to be serviced.

Inspector notes: Observed many large containers of cooked chicken between 44 and 50 degrees F in walk-in cooler. Chicken was cooked this morning around 10:30. COS - proper cooling methods discussed with staff, chicken moved to shallow pans and placed in freezer for rapid cooling. Putting hot or warm food in large containers does not cool food properly and warm food puts the rest of the food in the refrigerator at risk.
