Inspector notes: At 150pm, observed chicken prepared at 11am with internal temperature 123F. COS reheated to 169 by 205pm. Warmer was set to 145, which is fine if in a unit that does not get opened constantly. Recommend using higher temperature setting. Can try keeping the chicken on higher shelf and trying to keep it further towards the back away from the door. Or placing in a hot holding unit that isn't opened as often.
