The cooked potatoes were observed at 48 degrees f. The pan was covered with plastic wrap. PIC corrected on site by discarding the cooked potatoes.

Inspector notes: Observed several raw TCS foods in the walk in cooler including pork chops (expired 3/20/26) (40 pounds, beef stew (03/21/26)(30 pounds), and cube steak (4 pounds). The cube steak appeared discolored with a dark reddish color liquid. As a result, all raw foods that exceeded the disposal date was discarded and denatured with bleach.

Inspector notes: Observed the hand sink next to the fryer needs splashguards on each side to prevent contamination from splashing. A splashguard must also be installed between the three compartment sink and meat sink. PIC will install splashguards by 4/20/26. Also observed the location is using ice as a refrigerant for the salad bar that was installed recently without approval. The owner will contact Don Lucas to submit the equipment for review and approval by 4/16/2026.

Inspector notes: Observed containers/bins of sugar, flour, and meal stored on the floor in the kitchen area. Oven racks and dish racks were also stored on the floor. PIC corrected on site by washing oven and dish racks. Also observed two frozen turkeys stored on the floor in the walk in freezer. Several pans of uncooked rolls were observed uncovered in the walk in freezer. PIC corrected on site by raising all food and food contact surfaces 6 " above the floor.
