Inspector notes: Observed frozen mahi-mahi thawing in original reduced oxygen packaging (ROP) inside both the reach-in and walk-in units. (CA/COS): The Person in Charge (PIC) removed the fish from the reduced oxygen packaging to allow for proper thawing procedures. (RCA): Reduced oxygen packaged fish labeled to be kept frozen until use must be removed from the packaging prior to thawing under refrigeration at 41°F (5°C) or less, or prior to or immediately upon completion of thawing under running water. This is required to prevent the risk of pathogen growth, in accordance with DPH Rule 511-6-1-.04(4).
