Inspector notes: Observed several trays of oysters without their associated shellstock tags in reach in cooler at bar. According to PIC, oysters were placed on trays earlier today. The shellstock tags were kept in chronological order in a box above reach in cooler. Any time oysters are removed from their original container, must copy shellstock tag info when placing them in new containers / trays. COS by making copies of the shellstock tag from today's delivery. If this is observed on future inspections, the oysters will be discarded (even if PIC is able to definitively locate the shellstock tag).
