Inspector notes: Observed several time/temperature control for safety (TCS) foods cold held above 41°F in drawer reach in cooler under prep top and drawer reach in cooler to left of prep top. All TCS food must be cold held at 41°F or below. The ambient air temperature (AAT) of the reach in cooler under the prep top was 42°F. The AAT of the reach in cooler to the left of the prep top was 57°F. COS by moving TCS items to different coolers. Must fix coolers before cold holding TCS foods within it.

Inspector notes: Observed accumulation of debris and liquid residue that was dark in color on the inside of the reach-in coolers in the entire kitchen. Observed more residue inside the bottom of the prep coolers that have drawers on the bottom part of coolers. Corrective action: Thoroughly clean out all of the prep coolers in the main kitchen area- front prep line, drive-thru area, blender area. A good cleaning is needed under the customer self-serve soft drink fountain in the dining area.
