Inspector notes: Observed frozen shrimp left out on the prep sink at room temperature. Observed frozen fish thawing in a bowl of standing water. Corrective Action (CA/COS): The Person in Charge (PIC) discarded the standing water and placed the frozen fish into the cold holding unit for proper thawing under refrigeration. The frozen shrimp were also placed in the cold holding unit to thaw properly. (RCA): Time/temperature control for safety (TCS) foods must be thawed using approved methods.
