Inspector notes: Observed walk-in cooler with TCS food items above 41F (eggs, liquid eggs, turkey, cheese, chicken). RCA: PIC discarded above mentioned foods and called for servicing of walk-in cooler. Other food items within temperature were moved to reach-in cooler, freezer or in ice bath. Cold holding of TCS foods shall be kept at 41F or below. Follow-up 5/10/24 Observed that cold holding unit has been repaired and had an ambient temperature read of at least 39F.

Equipment, food-contact surfaces, and utensils shall be clean to sight and touch. Follow-up 5/10/24 Observed that ecolab had serviced unit.
