Advised PIC except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination. Advised PIC to place covers on foods.

Inspector notes: Observed multiple nonfood contact surfaces of the exterior of fryer baskets, ice machine and RIC#1 in need of cleaning due to excessive residue. Advised PIC that nonfood contact surfaces of equipment shall be kept clean and free of an accumulation of dust dirt, food residue, and other debris. Advised PIC to thoroughly clean all nonfood contact surfaces of the establishment.

Inspector notes: Upon arrival, observed the front door of the establishment propped open. Also observed the front door of the establishment with visible light entry at the bottom of the door. Advised PIC that all outer openings of the establishment shall be protected against the entry of insects and rodents by: solid, self-closing, tight-fitting doors. Advised PIC to close door and to place a weatherstrip at the bottom of the front door of the establishment.
