Inspector notes: Observed multiple TCS (time/temperature controlled for safety) food items, including pico de gallo, sliced tomatoes, shredded cabbage, sour cream, and red salsa cold holding above 41F (see temperature log) inside the Prep Top Cooler. CA: TCS food shall cold hold at 41F or lower. The ambient temperature of the cooler was 55F. COS: The PIC voluntarily discarded all TCS food items from the cooler that had been stored in there for 4 hours or more, after we checked and confirmed they were holding above 41F. PIC placed items that had just been placed into the cooler into ice baths. Advised that the Prep Top Cooler can not be used to hold TCS foods until it is holding at 41F or lower (ideally 36F-38F).

PIC stated they had finished cooking around 1.5 hours ago. Observed the temperatures of the champurrado at 120F. CA: TCS foods shall be cooled using approved and effective methods, such as ice baths, in shallow containers (metal when possible), and left partially or fully uncovered to allow heat to escape.
