Observed raw chicken and raw beef stored in containers directly next to ready to eat foods ( Steak in container). CA: TCS foods shall be stored according to its internal cooking temperature. Ready to eat foods shall always be stored separated from raw animal foods. COS- education provided by inspector and food was rearranged properly.

Inspector notes: Observed employee wash hands in hand sink then pat hands on soiled wet wiping cloth that was stored on the prep top cooler. CA: Immediately follow the cleaning procedure of washing hands with thorough drying using disposable paper towels, a continuous towel system, or a heated-air hand drying device. P 3. To avoid recontaminating their hands or surrogate prosthetic devices, food employees may use disposable paper towels or similar clean barriers when touching surfaces such as manually operated faucet handles on a handwashing sink or the handle of a restroom door.
