Inspector notes: Observed the nozzle to the soda dispenser in the main kitchen with visible mold accumulation. Manager stated they only clean them once a week. C/A In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (I) At a frequency specified by the manufacturer; or (II) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold. COS: Nozzles was taken out and cleaned at the three compartment sink in the main kitchen

Inspector notes: Observed the sanitizer at the three compartment sink to be less than 200ppm. C/A A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC), P have a concentration as specified in DPH Rule 511-6-1-.07(6)(g) and as indicated by the manufacturer’s use directions included in the labeling, P and be used only in water with 500 ppm hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions; COS Manager drained the water from the sink and re-fill it with new sanitizer. Sanitizer at the three compartment was not dispensing properly. Manager has 3 days to send the repair/calibrated to EHS

Inspector notes: Observed wiping cloths stored in a sanitizing solution below 100ppm. Facility is using QAC as sanitizer. C/A Sanitizing wipes should be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); COS Manager needs to have the sanitizing dispenser from the three compartment repaired. EHS needs to be sent the repair invoice within 3 days
