Foods must be kept at or under 41 until cooking or reheating begins. Do not overfill containers, may use lids, and keep the prep top lid closed. The ambient temperature in the kitchen was 92F, it will be difficult to keep foods at proper temperatures. Additionally, when you finish prepping a food, you must properly cool it to 41 or lower in the walk-in before placing on line, it will not cool down in time on the line as the coolers are opened too frequently.
