Inspector notes: Observed the sanitizer dispenser at the three-compartment sink expelling quat sanitizer at a concentration higher than 400ppm. The manufacturer's requirement is 150-400ppm. Chemical sanitizer used for food contact surfaces must meet the manufacturer's requirements. Dilute the sanitizer with water in the meantime and call maintenance to come and fix the amount of sanitizer being dispensed.

Inspector notes: Observed nothing on the sandwich prep line being held at 41F or below. PIC states that the unit is turned off at night and he turned it on at 8am this morning and stocked it at 8:30am before it had a chance to come down to the proper temperature. Ambient temperature for both units based on external thermometer is 53F and 58F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below for cold holding. PIC removed all items from meat line and placed them in the freezer so they can come down quickly before putting the items in the walk-in cooler. Bags of ice were placed underneath the vegetables. Each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels or a continuous towel system that supplies the user with a clean towel. Person in charge (PIC) added a roll of paper towels at the front handsink. Add a roll of paper towels to the men's restroom as well.

Inspector notes: Observed 0 parts per million (ppm) sanitizer solution inside the three compartment sink, while food contact containers were being dried. Per person in charge, facility did not have any sanitizer since yesterday. Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. Person in charge called his manager who brought sanitizer before I left. Utensils/containers must be rewashed, rinsed and sanitized today.

Inspector notes: Observed employee's non single use bottle stored near customer's food items on the prep table and another bottle stored inside the mustard box on the shelf. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.
