Inspector notes: Observed several TCS foods cold held above 41°F in walk in cooler and open prep top cooler. TCS food must be cold held at 41°F or below. AAT of walk in cooler was 40.5°F. The prep top cooler was set to the highest cold holding setting. Must adjust both units to a degree that can consistently cold hold TCS food at 41°F. COS by placing open prep top TCS food on Time as a Public Health Control (TPHC). Will email PIC TPHC written procedure. COS by moving TCS food items to the back of the walk in cooler. Health Authority will follow up on walk in cooler soon to ensure it is fixed.
