COS: PIC/CFSM discarded all of the food and has a work order with maintenance to get it fixed. Do not cold hold any TCS food until unit is operating properly. Call EH when fixed.

Inspector notes: Observed soiled food contact surface of Manitowoc automatic ice machine used by Subway. Observed a black slime build up on the inside of machine. CFSM shut ice machine off to be cleaned today.

Inspector notes: Observed dirty water dumped down hand washing sink in kitchen. CFSM stated she dumped out dirty water from cleaning equipment. I explained that you can not dump stuff down hand washing sink. COS: CFSM cleaned out hand washing sink and will not do it again.
