Inspector notes: Observed multiple food items in the Roll Top Prep Cooler not 41 degrees F or lower (ambient air, wasabi, crabmeat). Observed margarine reading "keep refrigerated" at 67 degrees F at the bottom of a prep table. CA: Cooler was closed shut. Cooler was left opened during service. Once closed for a while, the temperatures dropped to 43 and below. Margarine was discarded.
