CA: Discussed proper minimum strength of Quaternary Ammonium sanitizers and frequency for changing out chemical sanitizers with PIC. PIC replaced all wiping cloth sanitizing solutions and will change out the sanitizing solutions at a minimum frequency of every 4 hours.

Inspector notes: Observed container of sanitizing solution stored on counter directly next to multiple sleeves of single-use lids. After discussing with PIC, a food service employee was designated to prepare a new bucket which food service employee placed on top of ice machine. Corrective Action: Discussed proper storage of sanitizing solution to prevent contamination of food or items used to prepare or serve food with PIC. The sanitizer solution was relocated to a lower shelf away from food items and single-use items. PIC will retrain all staff on proper storage of toxic substances.

Corrective Action: Discussed regularly preparing and testing sanitizer solution at least every 4 hours with PIC. The solutions were discarded and new containers were prepared. Discussed using smaller cloths or folding cloths before placing in the sanitizer solution so that the wiping cloth is fully submerged.
