Inspector notes: Observed container of beef in the oven to measure 90F-106F. The beef had been cooked approximately 1.5 hours prior and was not meeting proper cooling parameters (135°F to 70°F within 2 hours). The person in charge was instructed to reheat the beef to 165F and restart the cooling process in order to be properly hot held in the steam table.

Container was put into the freezer to rapidly cool. Recommend using metal containers or portioning potatoes out into smaller containers.
