Inspector notes: Observed two pans of lasagna measuring at 46-48F in the reach in cooler located in the main kitchen. According to the person in charge (PIC), the lasagna had been prepared since the day before. PIC explained that the meat was cooked, then lasagna was prepared and put in the RIC to cool. Both pans discarded. Inspector went over proper cooling methods with staff.
