Inspector notes: Observation: Observed multiple potentially hazardous TCS foods cold holding at greater than 41 degrees Fahrenheit in prep top cooler in main kitchen area (Ambient: 60F, Sliced Cheese 54F, Mayonnaise 52F). The containers of food were being stored on top of ice in order to aid in cold holding. Corrective Action: Discussed proper cold holding temperatures with the CFSM. The mayonnaise (prepped less than 2 hours prior) was moved into a functional cooler to be properly cooled down. The sliced cheese was discarded. Discussed having the prep top cooler repaired or replaced with the PIC. The prep top cooler must be serviced by a licensed technician and documentation provided to the Health Department.
