Inspector notes: Observed in walk-in cooler raw chicken stored above ready to eat chicken. Observed also raw chicken liquid dripping on boxes of food beneath it. 511-6-1.04(4)(z) - Miscellaneous Sources of Contamination (C) (z) Miscellaneous Sources of Contamination. Food shall be protected from contamination that may result from a factor or source not specified under paragraphs (a) through (y) of this subsection. PIC instructed to rearrange and to stop filling raw chicken in a container to avoid accumulation of chicken fluid dropping and contaminating boxes of food and floor.

Inspector notes: Observed wet floor throughout the kitchen and in walk in cooler. Observed raw prepped chicken in several containers leaking water on the flow and ready to eat chicken in the boxes stored beneath them. Observed buildup of debris in reach in cooler and reach in door outside of microwave and dry storage container. Non-food contact surfaces of equipment shall be clean to reduce residue. PIC will have all equipment cleaned. PIC instructed to re-arrange stacking and drain water on the floor.
