Inspector notes: A pan of cooked/partially rendered bacon stored on top of the counter top oven measured 76F. Per the cook the bacon was cooked and placed on top of the oven for cooling approximately 1.5 hours prior to measurement. The inspector noted that the pan was tightly covered and not being monitored at the time of observation. A pan of cooked sausage patties stored within the 2-door stand-up cooler measured 60F-70F. Per the manager on duty, the sausage was removed from hot holding and placed in the cooler for cooling approximately 3 hours prior to measurement. The inspector noted that the pan was tightly covered at the time of measurement. The inspector reviewed proper cooling techniques the manager on duty and owner.
