Inspector notes: Observed food employee scratch back and then handle clean spatula at grill prep area. Observed employee handle register and handle clean tongs to handle eggrolls for bagging. Advised PIC Advised PIC that food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and after touching bare human body parts other than clean hands and clean, exposed arms. COS: PIC had food employees ceases prep and wash hands at the designated handwash sink.
