6-1A - proper cold holding temperatures
Inspector notes: Observed walk-in cooler with an ambient temperature of 48F. TCS foods within were also not at temperatures at 41F or below. CA: PIC moved TCS foods to other walk-in cooler (raw chicken that had been just delivered 42F). Time/temperature control for safety food shall be maintained at 41°F. Follow-up 8/27/25 12:00PM Observed that previously noted broken walk-in cooler was stocked with 33 boxes of raw chicken, perishable dressings, cheese, and produce. Ambient temperature was 48F. Raw chicken, dressings and cheese were at 48F and 49F. Facility DISCARDED all TCS foods (chicken, cheese, dressings) after verifying that foods had been kept in cooler overnight, no foods had been delivered today. Facility is not to keep ANY TCS foods in cooler until repaired and keeps cold foods at 41F or below....

RCA: Utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be: P safe P, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition.
