Inspector notes: Observed a large pan of freshly cooked chicken cooling in the walk-in cooler tightly covered. Ca: Advised PIC when placed in cooling or cold holding equipment, food containers in which food is being cooled shall be loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Advised PIC food should also be separated into smaller portions. Cos: PIC cooled food properly.
