Inspector notes: Observed TCS food cold held at greater than 41 degrees Fahrenheit. Reach in units in main kitchen held the following: EGGS SHELLED- 56ºF, AMBIENT 58ºF SAUCE CONCENTRATE 56ºF. Also observed wet batter on counter with a 79ºF temperature, held with no time as temperature procedures. PIC discarded item in question.
12B - personal cleanliness
Inspector notes: Observed various employee personal items spread throughout facility. Consulted with PIC on providing employee storage storage to prevent comingling with kitchen equipment.
