Inspector notes: Observed build up of organic substances (pink slime) in the ice machine. CA: 1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS: PIC started melting and emptying ice machine to clean, rinse, and sanitize.

Inspector notes: Observed accumulation of black build up on the magnetic knife holder. Clean knives and knife blades directly stored touching the soiled magnetic knife holder. CA: Equipment food-contact surfaces and utensils shall be cleaned: At any time during the operation when contamination may have occurred. P Advised PIC to increase frequency of cleaning and sanitizing. New Violation. COS: PIC removed knives and placed in 3 compartment sink to be washed and sanitized. PIC started to clean magnetic knife holder.

CA: A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation at contact times specified under subsection (8)(b)3 of this Rule shall meet the requirements specified in DPH Rule 511-6-1-.07(6)(g), shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions.
