Inspector notes: Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored,in the food with their handles above the top of the food and the container. Observed shredded mozzarella being dispensed with two metal containers without handles. Person In charge was advised to use utensils with handles and stored with handles above food items to prevent any possible cross contamination by 4/30/26 and send pictures to inspector via email.

External non food contact surfaces of cooking equipment and hot holding and cold holding equipment were observed soiled to touch and encrusted food residue. Person in charge was advised to create a cleaning schedule to avoid accumulation of residue.
