Inspector notes: Observed frozen reduced oxygen packaged fish thawing under refrigeration while still in the packaging. CA: Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment: (i) Prior to its thawing under refrigeration that maintains the food temperature at 41°F (5°C) or less; or (ii) Prior to, or immediately upon completion of its thawing, using procedures to completely submerge in running water as specified in paragraph 2 of this subsection. COS: PIC removed all thawing fish from the reduced oxygen packaging then placed back in the refrigerator to finish thawing.

Inspector notes: Observed 3 large containers of chips with cracked/broken lids. Observed the lid of the chip warmer in server station in disrepair. CA: Equipment shall be maintained in a state of good repair. Advised to replace all broken listed equipment.

Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests. Advised to increase frequency of licensed pest control service until the pest issues are resolved. Advised to email the health inspector a copy of all the pest control service reports for the next couple of months and to have pest control come back out to re-service this week.
