Inspector notes: At the time of inspection, it was observed that Time/Temperature Control for Safety (TCS) foods were stored improperly in three coolers. Specifically, raw eggs were stored on the top shelf of a one-door cooler, above ready-to-eat (RTE) cheese and heavy whipping cream. Additionally, onions and carrots were found stored between buckets of raw chicken on the bottom shelf of a two-door cooler. Raw fish and shrimp were also stored above RTE beans in a two-door cooler. Corrective Action (CA): All TCS foods shall be stored in accordance with their required internal cooking temperatures. Corrected on-site (COS): The Person in Charge (PIC) immediately reorganized TCS foods based on the minimal internal cooking temperature.
