Inspector notes: Observed no hand drying provision on mobile unit. CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: 1. Individual, disposable towels; 2. A continuous towel system that supplies the user with a clean towel; 3. A heated-air hand drying device; or 4. A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures Discussed with PIC to always have back-ups in base or other mobile so paper towels never run out. PIC did not have any back-up paper towels day of inspection.

Inspector notes: Observed no inspection report available for viewing. CA: At food service establishments with no primary or public door, the current inspection report shall be prominently displayed at all times where the documents can be read by the public from a distance of one foot away. If requirements of this paragraph are not possible because of physical restrictions, a location will be determined as approved by the Health Authority. Keep most recent inspection report for base in base at all times (from base inspection)

Inspector notes: Observed no mobile permit posted in public view. Mobile permit was found in base. Reminded PIC that the mobile food service permit shall be posted in public view at all times: CA: Post the permit in a location in the food service establishment that is conspicuous to consumers

Inspector notes: Observed exposed wood (nonfood-contact) and wood covered with carpet like material in mobile unit. Observed floors peeling under table near fryer with exposed plywood. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Informed PIC to seal or replace wood/carpet and flooring to cover up or remove any unapproved materials.

Inspector notes: Observed absorbent cloths at the wastewater outlet and fresh water vent. CA: Materials that are used in the construction of a mobile water tank, mobile food service unit water tank, and appurtenances shall be: 1. Safe; 2. Durable, corrosion-resistant, and nonabsorbent; and 3. Finished to have a smooth, easily cleanable surface. Discussed with PIC to removed any absorbent materials inside the outlets or vents of water tanks.

Inspector notes: Observed floors and walls in mobile unit in need of cleaning due to excess grease build-up. CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
