Also observed buildup of grease on equipment (fryer units, warmer cabinets, etc.). Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Inspector notes: Observed grease and debris on floor significantly behind and beneath fryers and larger equipment throughout main kitchen. Also observed accumulation of stagnant water in multiple areas on floor throughout kitchen resulting in malodor. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
