CA: Employee drinks must be from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment and utensils COS: PIC was notified. All unapproved employee drinks were discarded.

Inspector notes: Improper cooling of potentially hazardous, TCS foods observed. Deep container of Chili Mac measured at 50 degrees after over 12 hours of cooling in walk-in cooler. CA: Cooked TCS foods shall be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F or less. COS: PIC discarded chili mac. Employees were educated on proper cooling methods.

Inspector notes: Observed buildup of ice from frozen condensation on boxed food items in walk-in freezer. CA: Miscellaneous Sources of Contamination. Food shall be protected from contamination that may result from a factor or source not specified under these regulations. COS: Boxed food items were found to be sealed in plastic and were not directly contaminated. All other boxed food items were relocated away from condensation leak. Licensed professional will service freezer and correct issue.
