CA: Raw chicken must be prepared or stored in clean/dry location or if washed or thawed in meat sink, water should be running at a velocity to wash/thaw evenly. COS: pic placed raw chicken into walk in cooler.

Inspector notes: Observed dish machine not testing at minimum ppm and in need of data plate for sanitizer type and temperatures. CA: Dish machines must be maintained in good repair, with data plates to show type of sanitizing machine with chemical type and ppm/temperature it should maintain with wash and rinse cycle. COS: No correction on site. 3 comp sink is being used today while dish machine undergoes repair from service company and data plate is installed along with proper sanitizers.
