CA: Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) to ensure food safety is being managed within the food service establishment during all hours of operation. Discussed with PIC to sign up for certification as soon as possible. Provide picture proof via email.

Inspector notes: Observed multiple TCS food items not cold holding 41F and below. Those TCS food items were: a pot of chicken soup, Jamaican rice, jerk chicken, mac n cheese, raw salmon curry. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. COS: PIC voluntarily discarded the food items listed above as the food has been stored in the cooler for over 12 hours. The rest of the food items left in the cooler are not TCS food items.

CA: Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. PIC will have the kitchen closed until the hot water supply is fixed and is available. Will provide a video proof with proper hot water supply and temperatures by the end of the day.
