Inspector notes: Observed chlorine levels in three compartment sanitizing sink and two buckets measure over 200ppm chlorine. CA: Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions). COS: PIC voluntarily remade the chlorine sanitizer solutions to measure ~50ppm chlorine in three compartment sanitizer sink and two buckets.

Inspector notes: Observed an employee rinsing a few containers used to store food in three compartment sink and place the container on the shelf to dry without sanitizing. CA: After being cleaned, equipment food-contact surfaces and utensils shall be sanitized by immersion, manual swabbing, brushing, or pressure spraying methods, using a solution as specified under subsection (6)(n) of this Rule. Contact times shall be consistent with those on EPA-registered label use instructions by providing contact time of at least 10 seconds for a chlorine solution specified under subsection (6)(n)1 of this Rule; COS: PIC voluntarily rewashed and sanitized the containers.
