Observed raw shelled eggs above ready to eat spinach and pickles in walk in cooler. COS: spinach relocated to another shelf and shelled eggs above pickles moved to another box with eggs so that all eggs are below ready to eat foods.

Inspector notes: Observed multiple TCS foods placed in hot box directly from the walk in cooler at 2:30pm day of inspection. Hot box was not being used for reheating, but for holding foods only. Discussed that all TCS foods not in the process of reheating, cooking, prepping, or cold-holding shall be 135F or above. COS: Foods placed in ice bath to cool back down to 41F or less.
