Inspector notes: Observed time as a public health control log with the standing water used for storing in-use utensils started at opening (11am) at 71 deg F. CA: Discussed proper use of time as a public health control with PIC. Time cannot start until water is at a minimum temperature of 135 deg F. PIC discarded water and heated new container on grill temp to a minimum temp of 135 F. PIC must either use clean and dry container to store utensil or they must properly hold water at 135 deg F.

Inspector notes: Wiping cloth chlorine sanitizing solution not at proper minimum strength. PIC reported the solutions were made with bleach, soap and water. Corrective Action: Discussed proper preparation of chlorine sanitizing solution at 50-100 ppm with PIC. PIC discarded the solution and remade the sanitizer buckets at proper minimum strength, 50-100 ppm.

PIC will have 30 days to repair or submit plans for replacement with the Health Department.

Inspector notes: Observed food debris (cooked noodles, cabbage) in front handwashing sink drain. Per PIC, they will use the handwashing sink to rinse off their rags. CA: Discussed proper use of handwashing sink with PIC. The handwashing sink may not be used for any purpose other than handwashing. PIC cleaned and sanitized the handwashing sink with an approved sanitizer and will train staff.
