Inspector notes: Observed cooked pasta cooling in deep clear container (8Qt), cut tomatoes, and cut Romaine lettuce cooling in deep containers >2". COS, Cooked pasta was portioned into two separate shallower metal containers and placed on ice & in the walk-in cooler. Container of tomatoes were placed on proper ice bath to rapid cool and cut romaine was placed in an ice bath to rapid cool.
